History and Tradition
The almond pastries of Granadilla de Abona are one of the most representative products of traditional confectionery in southern Tenerife. These dry pastries, baked at a low temperature, have as their main and almost exclusive ingredient the almond (Prunus dulcis) cultivated in the midlands of the municipality, a territory where the almond tree has historically adapted to arid conditions and volcanic soils, often coexisting with the traditional agricultural system of the jable (volcanic sand). Their origin lies in a subsistence economy, where this highly nutritious nut was a fundamental resource. The traditional recipe, passed down through generations, stands out for its simplicity and the purity of its ingredients: ground local almonds, sugar, egg white to bind it, and a light touch of lemon zest for freshness. The resulting dense and crumbly dough is shaped into small portions which, after slow baking, acquire their characteristic texture. Organoleptically, the almond pastry of Granadilla de Abona has a firm and crisp exterior with a cracked, pale golden surface. Upon biting into it, a dense yet slightly tender interior is revealed. Its aroma is intense and distinct from the original, dominated by toasted almonds with secondary citrus notes. On the palate, the flavor is clean and persistent, with a balanced sweetness that allows the quality and oily profile of the local almonds to shine through. It is a sweet treat that encapsulates the landscape and expertise of the midlands of Abona.
