Grilled Cheese with Mojo

Grilled soft or semi-cured goat cheese with a golden crust and a melt-in-your-mouth center, drizzled with mojo sauce and honey. Chef's Tip: To ensure it's gluten-free, make sure the spices (cumin, paprika) are certified gluten-free.

| Semi-cured goat cheese | 500 g |
| Garlic from Tenerife | 4 cloves |
| Cumin seeds | 2 cdtas |
| Sweet paprika | 1 tbsp |
| Fresh cilantro | 1 bunch |
| Extra virgin olive oil | 150 ml |
| Pepper | 1 pellizco |
Preparation

Mojo Rojo: Crush garlic, cumin, and salt. Add paprika, vinegar, and palm pepper, and emulsify with oil.

Mojo Verde: Crush garlic, cumin, and salt. Add chopped cilantro, vinegar, and oil little by little.

Cut the cheese into 1 cm slices.

Grill the cheese on a griddle with a few drops of oil, 2-3 minutes per side.

Serve hot with the sauces.
